Can this be changed or users have an option via " User CP " to maybe hide topics from certain sections from showing up in the box?

ie. i select "shared hosting" and nothing will show up in the latest posts box after that from that section.

no you can't and it's a bit tricky to add something like that. It would also put extra load on the server. Nice idea but just too complicated for what's achieved.
