they dont care what are you doing, i mean encoding, its dedi not vps,
however if they caught you on public torrenting (they get abuse) you can get in trouble

it's your dedicated server, so you can encode and use up to the max your CPU & RAM usage.

for torrent, might be a bit risky for public tracker...private should be fine. try yourself.
